Bombay Hummous from REBAR


-1/4 cup canola oil
-1 inch piece of Sayward Haven Farm fresh ginger
-2 cups cooked chickpeas
-1/4 cup roasted cashews
-Juice of 1 lime
-2 garlic cloves
-1 tsp salt
-1 tsp ground cumin
-1 tsp ground coriander
-1/2 tsp cracked pepper
-1/4 tsp cayenne
-pinch of turmeric
-pinch of cinnamon
-2 tbsp chopped cilantro
-2 tbsp chopped mint


Gently heat oil in a skillet with sliced ginger.  Let ginger sizzle but not brown for about 10 minutes.  Remove from heat and set aside to cool.

Combine all ingredients in a food processor and pulse to blend to a rough puree.  Season with salt & pepper to taste.
